Ingredients

Quantity Ingredient
2 lebanese cucumbers, diced
4 tomatoes, diced
1/4 onion , diced
1/2 bunch mint, chopped

Dressing

Quantity Ingredient
1/3 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon ground cumin

Method

  1. Combine all the salad ingredients in a large bowl.
  2. Combine all the dressing ingredients in a bowl and season to taste with sea salt and freshly ground black pepper. Pour the dressing over the salad, toss lightly and serve straight away.
