On a cold, dark Scottish evening (of which there are many), there's nothing like a warm crumble for pudding.

For the filling

Ingredients

Quantity Ingredient
350g cooking apples, peeled, cored and chopped
100g frozen dark cherries
50g soft, light brown sugar
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

For the crumble topping

Quantity Ingredient
200g plain flour, sifted
salt
200g unsalted butter, chilled and cubed
100g jumbo oats
175g soft, light brown sugar

Equipment:

24 cm ovenproof pie dish

Method

  1. Preheat the oven to 180°c.
  2. To make the filling, place all the ingredients in a pan and cook on a low heat for 5 minutes, stirring occasionally, until the apples have softened.
  3. For the crumble topping, rub the flour, salt and butter with your fingertips, in a large bowl, until the mixture resembles coarse breadcrumbs. Add the oats and sugar and stir to combine.
  4. Transfer the cooked fruit to the pie dish and top with the crumble topping. Bake for 20–25 minutes until golden brown.
  5. Serve warm with vanilla ice cream or cream.
