We wait all year for the Scottish berry season to come, then stress out about how to use the thousands of berries when we've gone overboard with picking. Berry compote is even nicer made with those berries that are just a little over-ripe, so can’t be used elsewhere, but are too packed with flavour to waste. - Linsey

Ingredients

Quantity Ingredient
250g caster sugar
250ml water
300-400g mixed berries

Method

  1. Place the sugar and water in a heavy-based pan. Bring to the boil, continuously stirring until the sugar has dissolved. Turn the heat down and simmer for 5–10 minutes until the liquid looks syrupy.
  2. Remove from the heat and stir through the mixed berries.
  3. Allow to cool completely before using.
