Yoghurt, mint and rosemary marinated lamb

Ingredients

Quantity Ingredient
1kg fillet end of leg or lamb neck fillet, cut into bite-sized chunks
lemon wedges, to serve
Flatbread, to serve

For the raita

Quantity Ingredient
1/3 cucumber, cut into small dice
2 tablespoons roughly chopped fresh mint leaves
150g small pot of natural yoghurt
salt
freshly ground black pepper

For the marinade

Quantity Ingredient
150g natural yoghurt
1 lemon, juiced
1 tablespoon olive oil
1 garlic clove, crushed
salt
freshly ground black pepper
2 sprigs mint, stalks and leaves finely chopped
12 sprigs rosemary, leaves picked and roughly chopped

8 wooden or metal skewers

Method

  1. Combine the marinade ingredients in a large bowl. Add the lamb chunks and mix well. Cover the bowl with cling film and leave to marinate in the fridge overnight.
  2. If using wooden skewers soak them in cold water for 10 minutes. Thread the lamb onto the skewers.
  3. Cook the kebabs on a barbecue for 10 minutes (for medium-cooked lamb), turning frequently. Alternatively, heat a teaspoon of olive oil in a non-stick griddle pan on a high heat. Cook the skewers for 5–8 minutes, turning frequently.
  4. Meanwhile make the raita. Mix all the ingredients in a bowl. Season and chill until ready to use.
  5. Serve with lemon wedges, flatbread and raita.
