This is a really delicate dressing and, with the elderflower being such a subtle taste, it is best teamed with white fish or chicken. We have an elderflower patch just down the path from the café, so make our own elderflower vinegar in the summer, but it is available from most delis or large supermarkets.

Ingredients

Quantity Ingredient
2 teaspoons elderflower cordial
4 teaspoons elderflower vinegar
4 tablespoons extra virgin olive oil
1/4 teaspoon french dijon mustard
a small pinch salt
white pepper

Method

  1. Place all the ingredients in a bowl and whisk thoroughly.
