When we moved to Quarriers Village, one of the very first people to visit us was our neighbour, Anita, from Jenier Teas, who just happened to be a world-class tea supplier! We were delighted to discover such a gem on our doorstep and now stock a full range of her delicious teas in our café and use one called ‘Duchess Earl Grey’ in this summery iced tea. - Gillian

Ingredients

Quantity Ingredient
8 teaspoons good-quality loose-leaf earl grey tea
1.2 litres boiling water
2 lemons, juiced
8 teaspoons caster sugar, (more or less to taste)
ice cubes, to serve
fresh lemon slices, to serve

Method

  1. Place the tea leaves in a large teapot or heatproof jug, add boiling water and leave to infuse for around 4 minutes (longer if you enjoy a strong brew!).
  2. Pour the mixture through a fine sieve into another heatproof jug to extract the leaves. Discard the leaves, add the lemon juice, then slowly stir in the sugar, stopping regularly to taste. Add sugar until your preferred level of sweetness has been achieved.
  3. Leave to cool and then chill for 2 hours.
  4. Serve with plenty of ice cubes and a lemon slice in each glass or teacup.
