Watermelon, feta and mint salad

This is a summery twist on a classic Greek salad. We always throw it together as an accompaniment to barbecued lamb but it would be just as good served with a simple chicken dish.

Ingredients

Quantity Ingredient
1/2 small watermelon, flesh cut into 2.5-cm- cubes
1/2 cucumber, cut into 1-cm- cubes
200g feta cheese, cut into 1-cm- cubes
mint, leaves picked
100g pitted black olives
1 quantity Charred orange and olive oil dressing

Method

  1. Combine the watermelon, cucumber and feta cubes, the mint leaves and black olives in a large serving bowl. Stir through enough dressing to coat the salad, and serve.
