Feta is such a delicious, salty cheese that it works well on a mezze platter straight out of the packet but taking the time to prepare this rosemary marinade will add an extra zing, making it well work the effort. - Gillian

Ingredients

Quantity Ingredient
3 garlic cloves
250g feta cheese, cut into bite-sized chunks
mint, roughly chopped, (including the stalk)
rosemary, leaves picked
4 tablespoons extra virgin olive oil
1/2 teaspoon cracked black pepper

Method

  1. Preheat the oven to 200°c.
  2. Leaving the garlic cloves in their skin, wrap them in a piece of silver foil, and place on a baking tray. Roast in the oven for 15 minutes (this softens the garlic and makes it taste sweeter and milder). Remove the garlic from the oven and foil, and crush slightly using the back of a fork.
  3. In bowl, combine the crushed garlic (discarding the skin), feta chunks, mint, rosemary leaves, oil and pepper. Leave to infuse at room temperature for a few hours before serving.
