A classic Persian recipe, hot mint oil is used a little like French pistou, for drizzling over all kinds of soups. You could also splash a little on fresh white cheese and eat it with hot, fluffy Turkish bread.

Ingredients

Quantity Ingredient
2 teaspoons olive oil
2 garlic cloves, finely chopped
1 teaspoon dried mint

Method

  1. Heat the oil, then add the garlic and stir. Add the mint and immediately remove from the heat, as it burns quickly. Allow to infuse overnight. Sieve and use sparingly.
