Cabbage salad is a popular Lebanese dish, often eaten as an accompaniment to kibbeh. This version includes both fresh and dried mint and is delightfully refreshing.

Ingredients

Quantity Ingredient
200g savoy cabbage, core removed and very finely shredded
1/3 cup watercress leaves
1/3 cup mint leaves
1 lemon, juiced
1 large garlic clove, crushed with 1/2 teaspoon salt
50ml extra-virgin olive oil
1 teaspoon dried mint
salt and pepper

Method

  1. In a large bowl, mix together the cabbage with the watercress and mint leaves. In a separate bowl, blend the lemon juice with the crushed garlic, extra-virgin olive oil and dried mint. Pour the dressing over the salad ingredients and toss lightly. To serve, twist small handfuls of the cabbage in the palm of your hand to form little turbans.
