Orange-blossom clotted cream

This perfumed cream is delicious served alongside almond, orange and lemon cakes, or with hot fruit tarts, roasted peaches or even sweet nut-stuffed quinces.

Ingredients

Quantity Ingredient
250ml pure cream
50ml sour cream
2 tablespoons mild-flavoured honey
1 orange, finely zested
1 teaspoon orange-blossom water

Method

  1. Combine all the ingredients in a saucepan and very, very slowly bring them to the boil. As soon as the cream boils, lower the heat and keep it at a low simmer for 5 minutes. Tip it into a glass bowl and leave it overnight, outside the refrigerator, wrapped in a blanket.
  2. Refrigerate until required.
