Dried fig and pistachio chocolate truffles

Squidgy, fudgy and chocolatey, with a pleasing crunch from the nuts, these chocolate goodies are irresistible. This makes quite a large quantity, but they freeze well and will keep for 3–4 weeks in the refrigerator, although it is unlikely they will last that long!

Ingredients

Quantity Ingredient
200ml condensed milk
500g good quality dark chocolate
1 tablespoon vanilla extract
1 cup dried figs, finely diced
2 cups unsalted pistachio nuts, shelled
best quality cocoa powder, for dusting

Method

  1. Melt the condensed milk, chocolate and vanilla over a pan of simmering water.
  2. Mix in the figs and pistachio nuts and pour into a tin lined with greaseproof paper. Leave to set, then turn out, cut into squares and dust with cocoa powder.
