An adaptation of the more commonly found red harissa, green harissa is more fragrant than fiery, with a milder and sweeter taste. The coriander makes it more refreshing.

Ingredients

Quantity Ingredient
125g large green chillies, seeded, scraped and shredded
garlic
100g fresh spinach leaves, stalks removed
2 cups coriander leaves, roots removed
1 teaspoon caraway seeds, roasted and crushed
1 teaspoon coriander seeds, roasted and crushed
1 teaspoon dried mint
1/2 teaspoon chilli powder
60ml olive oil

Method

  1. Place all the ingredients except for the oil in a food processor. Whiz for a minute, and then, with the machine still running, slowly add the oil until the mixture is the consistency of pouring cream. Season with salt and pepper. Pour into a jar, top with a thin layer of olive oil and refrigerate. It will keep for around a week.
