Juniper berry dressing with preserved lemons

One of our favourite dressings.

Ingredients

Quantity Ingredient
2 egg yolks
1 teaspoon dijon mustard
1 tablespoon sherry vinegar
1/2 lemon, juiced
1/2 tablespoon freshly ground black pepper
1 tablespoon juniper berries, crushed
300ml olive oil
120ml water
1 tablespoon Preserved lemons and limes, peel only

Method

  1. In a blender at medium speed combine the egg yolks, mustard, vinegar, lemon juice, pepper and juniper berries. Slowly add the oil until the dressing thickens.
  2. Add half the water, then the remaining oil, followed by the rest of the water. The dressing should have a honey-like consistency. Pour into a bowl and add the preserved lemon. Check the seasoning and add salt if necessary.
