Grilled snapper with walnut–pomegranate salad

In the Middle East grilled fish is often served piping hot, straight from the pan, with a thick, nutty sauce called tarator. In Lebanon they favour pine nuts, but we also love the more Turkish use of walnuts. Their dark toastiness works beautifully with the soursweet intensity of pomegranate molasses.

White fish, such as snapper or sea bass, works particularly well with tarator, and we’ll often serve it with walnut–pomegranate dressing. But for a change, try serving the same ingredients in a loose salad.

150g walnuts, roasted and the skins rubbed off
1 cup coriander leaves
1 small purple onion, finely diced
1 mild long red chilli, seeded, scraped and roughly chopped
1 lemon, juiced
80ml extra virgin olive oil
1 teaspoon pomegranate molasses
2 teaspoons pomegranate seeds
800g snapper fillets
salt and pepper
80ml olive oil
extra virgin olive oil
Walnut–pomegranate dressing, (optional)

Method

  1. To make the salad, break the walnuts up roughly and put them in a mixing bowl with the coriander, onion and chilli. Add the lemon juice, oil and pomegranate molasses and mix everything together well.
  2. Use kitchen paper to pat the snapper dry, then season lightly on both sides. Heat the oil in 2 frying pans until almost smoking, then lower the heat to medium–high and put the fillets in, skin side down. Fry for 2 minutes, then turn them over and fry for another 2 minutes.
  3. Remove the fish from the pan and place on serving plates, skin side up. Drizzle with a little extra virgin olive oil, then spoon over the salad and garnish with pomegranate seeds. All this dish needs is some simple boiled new potatoes and a soft green-leaf salad.
