A terrific cooling dip that goes with so many things. Homemade tzatziki is simple to make, and infinitely superior to any shop-bought version – the flavours are much richer and more vibrant.

Ingredients

Quantity Ingredient
1kg natural yoghurt, strained overnight or for 24 hours
2 lebanese cucumbers, seeded and grated, (skin on)
1 garlic, crushed with 1 teaspoon sea salt
1 teaspoon dried mint
1/2 cup mint leaves, roughly chopped
1 lemon, juiced
salt and pepper

Method

  1. Mix all the ingredients together in a large bowl and season with a little salt and pepper. Chill until required.
