Many years ago, before embarking on our travels around the Middle East we were both a bit ho-hum about breakfast, often skipping it altogether or downing a latte on the run. But now it is one of our favourite meals of the day.

When we are in Lebanon, Greg’s top breakfast dish is knafeh bi jibn, a wicked pastry made of crisp, buttery, finely shredded filo, filled with soft white cheese and doused in orange flower syrup. (Warning: eat with a very strong black coffee!) For Lucy, it’s a Persian-style breakfast of oversized flatbreads, warm from the bakery, smeared with saffron jam and clotted cream and washed down with copious cups of strong tea.

Sadly, such indulgence is not always practical, so the first meal of the day usually revolves around yoghurt and a selection of fresh or poached fruit, depending on what’s in season. We’ll sometimes also have a hard-boiled egg sprinkled with cumin salt or griddled flatbread with dips or a piece of fresh white cheese, like feta, with crunchy cucumbers, tomatoes and olives. Lucy’s also a big fan of granola, and we’ve developed a fabulous low-sugar Middle Eastern version, chock-full of sour cherries and pistachios and a dash of rosewater.

At the weekends we often make time for something more substantial. The Middle East provides plenty of inspiration for hearty breakfast fare – dishes thick with beans and pulses are essential for seeing workers through to lunchtime, especially in the bitter winters and where people have physically arduous jobs. We’ve also included our favourite egg dishes, as well as glazed apple fritters for a sweet treat.
