Ingredients

Quantity Ingredient
1kg natural yoghurt, strained for 48–72 hours
1/2 cup chopped herbs, (choose a selection or mixture of flat-leaf parsley, mint, chives, tarragon or dill), optional
1/2 tablespoon black peppercorns
olive oil

Method

  1. Remove the strained yoghurt from the bag and, with oiled hands, roll into small balls. Roll each ball in the herbs, if using, then put them into a jar with the peppercorns and enough olive oil to keep them completely submerged.
