This vegetarian take on the famous Moroccan ‘bisteeya’ is wonderfully effective. The eggplant, while not at all traditional, melds beautifully with the herbed custard to create a luscious and rich filling, that is just as satisfying and impressive as the traditional game birds. It is true that it is somewhat time-consuming to prepare the component parts, but the finished result makes such an impressive party-piece – and is so delicious – that it is worth the effort.
