Ingredients

Quantity Ingredient
125g unsalted butter, softened
200g caster sugar
4 teaspoons honey
100g plain flour
1/2 teaspoon ground ginger
2 egg whites
milk
100g sesame seeds

Method

  1. Preheat the oven to 160ºC. Line two baking trays with baking paper.
  2. In an electric mixer, cream the butter and sugar at high speed. Add the honey, flour and ground ginger. When they are fully blended, add the egg whites and mix well. Place well-spaced teaspoons of batter on the prepared baking trays. Wet your finger in some milk and carefully flatten then smear the batter out to circles 8–10 cm round and 1 mm thick. Bake the wafers on the middle shelf of the oven for 7–10 minutes, or until they are golden brown. Carefully transfer to a wire rack to cool, then store in an airtight container for up to 3 days.
  3. Sesame–honey wafers

    Sprinkle the batter circles liberally with sesame seeds, pouring off any excess, then bake as described above.
