Method

  1. Mix 180 g chopped Blue Castello (or another mild, creamy blue cheese), 180 g coarsely grated mozzarella, 100 g coarsely grated parmesan cheese, 1 teaspoon Turkish chilli flakes and 1 tablespoon extra-virgin olive oil. Roll the pizza dough out into rounds 10 cm in diameter and brush with olive oil. Spread the topping thinly over the rounds and bake for 4–5 minutes (a fan-forced oven may take as little as 3–4 minutes).
