A popular mix from the Persian gulf region of Iran, where the extensive use of spices—and even the odd touch of chilli heat—reflects this region’s long trading history with the nearby Arab countries and Africa and India. This blend is widely used in the many fish and sea food dishes found there.

Method

  1. Combine 1 1/2 teaspoons ground cumin, 1 teaspoon ground coriander, 1 teaspoon ground turmeric, 1/2 teaspoon finely ground caraway seeds, 1/2 teaspoon finely ground cardamom seeds, 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon freshly grated nutmeg. Transfer to an airtight jar. Store for up to 3 months.
