Method

  1. In a food processor, combine 3 peeled, seeded and diced medium tomatoes, 2 seeded, scraped and finely diced red bullet chillies, 1 finely diced clove garlic, 3 tablespoons grated ginger, 2 tablespoons sugar and the juice of 2 lemons. Whiz to a fine, smooth purée. With the motor running, gradually add 150 ml olive oil and 100 ml walnut oil until the oils are fully absorbed. Check the seasoning and add salt and white pepper, to taste. Pour into a sealable jar and store in the fridge. It will keep for 5 days.
