Green leaf salad with figs and yoghurt cheese

Ingredients

Quantity Ingredient
1 head red witlof, leaves trimmed
1 cup watercress leaves and flowers
1/2 cup chervil leaves
1/2 cup snow pea tendrils
1/3 cup black basil leaves
1/3 cup chocolate mint leaves
6 firm but ripe figs, peeled and quartered
3 french radishes, sliced lengthwise into wafers
200g Yoghurt cheese

Hazelnut dressing

Quantity Ingredient
50ml hazelnut oil
few drops sesame oil
50ml olive oil
30ml champagne vinegar
50ml water
sea salt and freshly ground white pepper

Method

  1. To make dressing, tip the oils into a bowl and whisk in the vinegar, then the water. Season with salt and pepper.
  2. For the salad, tip all the ingredients except the yoghurt cheese into a bowl. Lightly season with salt and pepper and pour in as much dressing as required. Gently mix the salad with your hands and arrange on plates neatly to form a circle. Place blobs of yoghurt cheese around the salad and drizzle on a little more dressing, if needed.
