Spring vegetable paella

This paella is cooked more like a risotto so the rice becomes creamy. It has no cheese, though, in order to maintain the fresh intense flavours of the vegetables.

Ingredients

Quantity Ingredient
60ml olive oil
1 small onion, quartered
2 garlic cloves
400g vialone nano rice
1 litre good-quality chicken stock or vegetable stock, simmering
15 saffron threads, roasted and crushed to a powder
120g shelled peas, blanched for 2 minutes
120g fresh broad beans, blanched and peeled
8 Artichokes cooked à la Niçoise
or good-quality purchased artichokes preserved in oil, quartered
2 medium tomatoes, seeded and diced
sea salt and freshly ground black pepper
100g butter, chilled and cut into small cubes
green salad, to serve

Method

  1. Heat the oil in a saucepan and fry the onion and whole garlic cloves in the oil for a few minutes to flavour it, then discard the onion (but keep the garlic). Add the rice and stir for 2 minutes to coat each grain with the oil. Ladle in enough simmering stock to cover the rice by a finger’s width. Cook on medium heat, stirring with a wooden spoon from time to time, until most of the stock has been absorbed.
  2. Add the same quantity of stock and continue to cook on medium heat, stirring from time to time, until most of the stock has been absorbed.
  3. Add a third amount of stock (reserving some for the next stage) and when half the liquid has been absorbed, add the saffron, blanched peas and beans and the artichokes. Stir gently, then add the tomato, red capsicum and salt and pepper to taste.
  4. Remove from the heat, cover the pan and let sit for 3 minutes. Return the pan to the heat and add the cold diced butter and the last 100 ml of stock and stir gently until the butter has been incorporated.
  5. Adjust the seasoning if necessary and serve with a fresh green salad.
