Preserved lemons add a wonderful tang to guacamole. Serve as part of a mezze selection, or as a more formal starter with strips of smoked eel and toasted baguette slices.

Guacamole

Ingredients

Quantity Ingredient
1 large ripe but firm avocado, cut into 5 mm dice
1 small tomato, skinned, seeded and cut into 5 mm dice
1/3 cup coriander chopped leaves
1 long green chilli, seeded, scraped and finely chopped
1 lime, juiced
1 garlic clove, crushed with 1/2 teaspoon sea salt
1/2 Preserved lemons and limes, skin only, finely chopped
1/2 medium purple onions, finely chopped
extra-virgin olive oil, for drizzling
1 teaspoon ground sumac, (optional)
sea salt and freshly ground black pepper, (optional)

Method

  1. Gently combine the avocado, tomato, herbs, lime juice, garlic paste, preserved lemon and onion in a large mixing bowl. Drizzle a little extra-virgin olive oil around the plate and sprinkle with sumac and salt and pepper, if desired.
