Method

  1. In a mixing bowl, beat 1 kg thick natural yoghurt with 2 tablespoons honey, a generous splash of orange-flower water and the lightly crushed seeds of 4 cardamom pods. Spoon into a clean muslin or cheesecloth square or a tea towel. Strain the yoghurt for 24–48 hours, as described opposite. Serve with fresh strawberries or as accompaniment to syrupy cakes or puddings instead of cream.
