Ingredients

Quantity Ingredient
500ml water
250ml milk
100g caster sugar
50g liquid glucose
2 cinnamon sticks
200g best-quality dark chocolate
20g cocoa powder

Method

  1. Put the water, milk, sugar, glucose and cinnamon sticks in a large saucepan and slowly bring to the boil. Break the chocolate into pieces and put it in a mixing bowl with the cocoa powder. Pour on the boiling milk mixture, stirring until the chocolate and cocoa have melted and dissolved. Cool, stirring from time to time. Strain the mixture to remove the cinnamon sticks, then pour into an ice-cream machine and churn according to the manufacturer’s instructions. Transfer to the freezer until ready to serve.
