Ingredients

Quantity Ingredient
100ml extra-virgin olive oil
1 garlic clove, finely chopped
1 teaspoon sweet paprika
1/2 teaspoon caraway seeds, lightly roasted and crushed
A pinch cayenne pepper

Method

  1. Heat a tablespoon of the oil in a small saucepan. Add the garlic and spices and sweat gently for 5 minutes.
  2. Add the remaining oil and heat gently until a cube of bread dropped into it starts to sizzle. Remove from the heat and allow to cool completely. Strain through a piece of muslin to remove the spices. You should be left with a vibrant orange oil. Store in an airtight jar for up to 2 weeks.
