Honey–caramel

Ingredients

Quantity Ingredient
100g caster sugar
100g honey
100g water
1 teaspoon ground ginger
Ice cream base

Method

  1. To make the honey-caramel, put the sugar and honey in a saucepan with 50 ml of the water. Bring to the boil, then lower the heat and simmer gently until it starts to darken and caramelise. Add the rest of the water and continue simmering until everything dissolves back to a smooth caramel, then whisk in the ground ginger.
  2. Make the base recipe, substituting honey-caramel for the syrup. Whisk until mixture is cool. Chill then pour into ice cream machine and churn, according to the manufacturer’s instructions.
