This is a bit of a retro dish, though the mint leaves make all the difference to these fried eggplant sandwiches. They are very rich, so one will probably do you. They make a filling snack or a tasty lunch. Bastourma – Armenian air-dried beef – is available from Middle Eastern or Turkish butchers.
