As with Lebanese baba ghanoush, smokiness is the essence of this borani. If you can char the eggplants over a direct flame, all the better. If you don’t have a barbecue or gas stove, you can always bake the eggplants in the oven until very soft, but you won’t get the same distinctive smoky flavour.
