This refreshing summer drink can be made from just about any combination of citrus fruits, or any on its own.

Ingredients

Quantity Ingredient
500ml water
200g caster sugar
200ml orange juice
100ml lemon juice
1 orange, finely zested
1 lemon, finely zested
crushed ice, to serve
mint leaves, to garnish

Method

  1. Put all the ingredients into a large heavy-based saucepan and heat slowly until the sugar has dissolved, stirring, then bring to a boil. Lower the heat and simmer, uncovered, for 20 minutes. Leave to cool, then strain into sterilised bottles.
  2. Store in a cool place for up to 12 months. After opening, use within two months. To serve, dilute the sherbet with still or sparkling water and serve with crushed ice and garnished with mint leaves.
