Monkfish has a very sweet and delicate flavour and is a great fish for braises and soups. For some reason monkfish is inexpensive here in Australia, while in Europe the opposite is true. Fishermen in Croatia love to cook this fish. It was one of the first fish that I ever caught – I remember mornings spent on a gajeta (a traditional Croatian wooden fishing boat) on the calm Adriatic and the feelings of joy and pride when we pulled the monkfish out of the sea and into the boat. If you buy a whole fish, use the head to make soup or the stock for this dish.

Ingredients

Quantity Ingredient
800 grams monkfish fillets
100ml extra virgin olive oil
2 tablespoons garlic, chopped
50ml white wine
250ml Dalmatian tomato sauce
100ml fish stock
300 grams cooked white beans, such as cannellini (lima) beans
sea salt
freshly ground black pepper

Method

  1. Wash and dry the monkfish fillets. Heat the olive oil in a large, non-stick frying pan over high heat until nearly smoking. Add the monkfish fillets. Season the fish well with salt and pepper and sear on both sides for a minute, turning them over gently with a spatula, until golden brown. Add the garlic to the pan and cook for a few seconds. Add the white wine and cook until the wine has nearly evaporated.
  2. Preheat the oven to 220°C.
  3. Transfer the fish to a clay pot or ovenproof baking dish. Add the tomato sauce, fish stock and cooked beans. Mix gently and adjust the seasoning. Bake in the oven for 10 minutes then serve.
