Soparnik is a dish that is actually a protected cultural heritage item from Poljica, a region between the towns of Split and Omis in Dalmatia. Almost all of my ancestors are from that region. My grandmother gave me her soparnik recipe, which she used to make for special occasions. My task was to crush the garlic with the mortar and pestle and my grandfather was in charge of cutting the soparnik into perfect diamond-shaped pieces after it was cooked.

Ingredients

4 garlic cloves, finely chopped or crushed
100ml extra virgin olive oil
sea salt

Filling

1kg silverbeet
1 bunch flat-leaf parsley
1 bunch spring onion, chopped

Dough

Quantity Ingredient
500 grams plain flour
3 tablespoons extra virgin olive oil
1/2 teaspoon salt

Method

  1. For the filling, wash and dry the silverbeet, remove all the stems and cut the leaves into small strips. Wash and dry the parsley then chop it. Put all the filling ingredients in a bowl and season with salt. Set aside.
  2. For the dough, put the flour in a large bowl, make a well in the centre and add the olive oil, salt and 250 ml water. Mix by hand (or with an electric mixer fitted with the dough hook) until you have a smooth dough. Allow the dough to rest in the refrigerator for about 30 minutes.
  3. Preheat the oven to 200°C and grease a baking tray.
  4. Divide the dough in half and roll out each piece on a work surface dusted with flour to a thickness of about 1 mm and about the size of your baking tray.
  5. Spread one piece of the dough on the baking tray and cover it with the silverbeet mixture. Gently top with the other piece of dough. Seal the edges and prick the dough all over with a fork. Bake for about 20 minutes until the dough is cooked through and a nice golden colour.
  6. When the soparnik is cooked, mix together the crushed garlic and olive oil and brush this mixture generously over the soparnik. Cut the pastry into 10 cm diamond shapes and serve.
