These are the kind of cookies that you will want to eat while curled up, buried under a multitude of blankets with your best friends and a lame, wintery movie for company. So when it’s getting cold and you’re in the mood to cookie it up, wrap yourself in a blanket – cape style – and move your body into the kitchen so you can make these. Go, go! Get cookie-ing!

Ingredients

220g almonds
4 tablespoons ground flaxseed
1 egg
1 tablespoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
3/4 teaspoon baking powder
100g dark chocolate, chopped
55g desiccated coconut
or 55g shredded coconut
200g brown sugar
or 200g coconut sugar

Method

  1. Place the almonds and coconut in a food processor and blend until mealy. Continue to blend, scraping down the sides of the food processor with a rubber spatula as needed, until the mixture forms a paste.
  2. Add the rest of the ingredients, apart from the chocolate, to the food processor and blend until well mixed. Stir in the pieces of chocolate.
  3. Shape heaped teaspoons of the dough into balls and place them on a baking tray lined with baking parchment. Chill in the fridge for at least 1 hour or up to 7 days (the longer you leave them, the more flavour they will have – and it’s worth it).
  4. When you’re ready to cook the cookies, preheat the oven to 180°C. Making sure the balls of dough are spaced 2.5 cm apart on the lined baking tray, bake them for 5–7 minutes, until the edges are golden brown. Let them cool on the baking tray for a few minutes before transferring to a wire rack to cool completely. They will keep in an airtight container for up to 5 days.

Note:

  • Instead of using whole almonds and desiccated coconut you can use 275 g natural almond butter (store-bought or homemade) or peanut butter, and stir the mixture together in a bowl.
