I started making my own muesli because the packaged ones were never really fresh enough for my liking. I used to live down the road from the greatest nut shop on the planet, and being a do-it-yourself kind of person, it just made sense to come up with my own creations – plus, it was extra fun! Although I have since moved away from said nut shop, I still like to experiment with new muesli flavours and combinations.

Ingredients

Quantity Ingredient
30g flaked coconut
60g roughly chopped walnuts
200g dried figs
75g dried currants
400g rolled oats

Method

  1. Start by toasting the coconut. Pop a heavy-based frying pan over medium heat and add the coconut. Shake the pan often and keep a very close eye on it, as it will burn easily. As soon as you see a little colour, remove from the heat and transfer immediately to a large mixing bowl. Wipe the pan with a paper towel and repeat this process with the walnuts.
  2. Next, dice the dried figs until they are roughly the same size as the currants. Add the figs, currants and oats to the bowl and stir well to combine. I usually use my hands for this.
  3. Leave to cool completely and store in a large glass jar or airtight plastic container for up to six weeks.

Try this

  • Feel free to exchange the walnuts for any other seed or nut you love. Same goes with the dried fruit – find your own favourite combo.
