It’s porridge – hardly something you need a recipe for. Yet everybody seems to have their own way of making and serving it. I cook it in water with a pinch of salt. The accompaniments vary – milk, almond milk, fresh fruit, poached fruit, dried fruit, jam, honey, yoghurt, double cream, spices, toasted seeds, toasted nuts... However, the combination here is by far my favourite. Add as much or as little of the toppings as you fancy.

Ingredients

Quantity Ingredient
2 handfuls walnuts
100g rolled oats
500ml cold water
splash almond milk
2 dollops jam

Method

  1. Dry-toast the walnuts in a heavy-based frying pan over medium heat, until just beginning to colour. Set aside.
  2. Next, add the oats, water and a pinch of salt to a saucepan and place over high heat. Bring to the boil, stirring occasionally, then lower the heat. Cook for 5 minutes, stirring every now and then. Add a nice splash of almond milk and mix through.
  3. Pour into two serving bowls. Dollop the jam on top, scatter over the toasted walnuts and serve.
