Roast sweet potato wedges with labneh + dukkah

We are slightly obsessed with sweet potatoes at my house, but you can’t blame us – they are so yummy and super nutritious, too. To add some spice, serve the wedges with Harissa mayo on the side.

Ingredients

Quantity Ingredient
1 sweet potato, peeled and cut into wedges
2 tablespoons olive oil
125g Labneh
2 tablespoons dukkah

Method

  1. Preheat the oven to 200°C.
  2. Toss the sweet potato with the olive oil and a few pinches of salt and spread out on a baking tray. Roast in the oven for 20 minutes, or until cooked through and golden.
  3. Spoon into bowls and dollop the labneh over the top. Finish with a sprinkling of dukkah.
  4. Serve immediately.

Try This

  • Serve with some Cauliflower salad or Tabouli to create a simple, delicious meal.
