Grilled nectarines with labneh, honey + pistachios

I really love the sensation of hot nectarines with cold labneh. This recipe doubles as a healthy dessert or a lovely summer breakfast. It works well with all stone fruit, so feel free to swap the nectarines for whatever you have in the fruit bowl.

Ingredients

Quantity Ingredient
2 tablespoons butter
4 nectarines, halved and pitted
90g Labneh
2 tablespoons honey
2 tablespoons shelled pistachios, roughly chopped

Method

  1. Heat a frying pan over medium–high heat and melt the butter. Add the nectarines and grill them for about 5 minutes on each side, or until softened.
  2. Serve with a dollop of labneh on top of each, then drizzle with honey and scatter over the pistachios.
  3. The nectarines will keep in the fridge for up to 2 days.
