These are the three different methods for making meringue. Each recipe adds the sugar to the egg whites in a different way, but they all make similar meringue. Whichever method you choose, if you prefer a sticky meringue (such as for a pavlova), add a tablespoon of cornflour or white vinegar once the sugar has been added before being baked.

Ingredients

350g white caster sugar
6 egg whites

Method

  1. Pre-heat the oven to 200ºC. Pour the sugar onto a baking tray and place in the oven to warm up.
  2. When the sugar has been in the oven for 5 minutes, beat the egg whites in an electric mixer until stiff. Take the sugar out of the oven.
  3. When the egg whites are well-risen and firm, set the mixer to the lowest speed and gently pour on the hot sugar in a thin stream, taking no more than 2 minutes to add all the sugar. The meringue is now ready to use.
