This is a dish that anybody can make. While filming the television series, we made this crumble with a group of city bankers. They were surprised just how easy it was. To be honest, you can make a crumble without even cooking the filling simply by chopping apples and adding a few blackcurrants or something similar, placing the crumble mixture on top and slowly baking in the oven for 25–30 minutes. This recipe is quicker as the filling is cooked and already hot when placed in the dish, so all you need to do is add the crumble and finish off in the oven. I make this dish quite a lot at home because there are a lot of plum trees in my garden.

Ingredients

Quantity Ingredient
15 fresh dark plums, cut in half and stones removed
50g butter
1 vanilla pod, split
1 star anise
few gratings of nutmeg
2 cinnamon sticks
100ml red wine
5 tablespoons golden syrup
4 tablespoons caster sugar

For the crumble:

100g butter, softened
100g demerara sugar
180-200g plain flour

Method

  1. Pre-heat the oven to 200ºC.
  2. Sauté the plums with the butter in a hot frying pan for a few minutes. Add the split vanilla pod, star anise, nutmeg and cinnamon, red wine, syrup, sugar and 50ml water, then bring to the boil and simmer gently for 6–8 minutes.
  3. As the plums break down to a thick, syrupy texture, place in an ovenproof dish.
  4. To make the crumble, mix the butter and flour together until the mixture resembles breadcrumbs, then mix in the sugar. Sprinkle the crumble over the plums and bake in the oven for 20–25 minutes or until golden brown.
  5. Remove from the oven and allow to cool slightly before serving with ice cream or double cream.
