The most important advice I can give you when buying chocolate for cooking is to buy the best you can afford, but don’t go for sweet chocolate bars.

Ingredients

Quantity Ingredient
200ml milk
100g caster sugar
50g liquid glucose
20g cocoa powder
160g dark chocolate, chopped

Method

  1. Place the milk, sugar, glucose and cocoa in a saucepan with 200ml water.
  2. Heat gently, whisking all the time, until the mixture boils, then add the chopped chocolate.
  3. Allow the chocolate to melt, then pass the mixture through a sieve and allow to cool.
  4. When cool, churn in an ice-cream machine until set.
  5. Once frozen, transfer the sorbet from the machine into a freezerproof container with a lid and store in the freezer. The sorbet will keep for a few months.
