Junket is such an old-fashioned dish. Roughly speaking, it is made from warmed milk with rennet added and allowed to set, sometimes flavoured with rum or vanilla. Here I’ve taken the flavours and milk and made it into ice cream. Served with other old classic puds like spotted dick and Kentish pudding pie, it tastes great.

Ingredients

Quantity Ingredient
8 eggs
180g caster sugar
250ml double cream
750ml milk
1 vanilla pod
6 tablespoons rum

Method

  1. Place the eggs and sugar into a bowl and whisk to combine.
  2. Place the cream, milk and split vanilla pod into a saucepan and bring to a boil. Pour onto the eggs and sugar and whisk.
  3. Return to the saucepan and bring to a boil, stirring constantly. Cook for about 1 minute, until just thickened, then remove from the heat. Pass the mixture through a sieve into a bowl and add the rum.
  4. Pour into an ice-cream machine and churn until frozen.
  5. Transfer the mixture to a sealable container, place in the freezer and freeze until required.
