This standard recipe for ice cream can be adapted to make different flavours simply by removing the vanilla pod and replacing with zest and juice, or a juicy fruit such as passion fruit. However, if you are making a honey- or alcohol-flavoured ice cream, remove 50g of sugar from this recipe as too much sugar or alcohol will act as a defrosting agent.

Ingredients

Quantity Ingredient
1 vanilla pod
500ml milk
200g caster sugar
500ml double cream
8 egg yolks

Method

  1. Using a sharp knife, cut the vanilla pod in half lengthways and remove the seeds. Place the milk, vanilla seeds and pod, half the caster sugar and the cream in a pan and bring to the boil.
  2. Whisk the egg yolks in a bowl and add the remaining sugar. When the cream mixture has boiled, pour it slowly on to the eggs, whisking all the time. Return the mixture to the pan over a high heat and mix quickly until the mixture has thickened.
  3. Pass through a sieve into a bowl, then place the mixture into an ice-cream machine. Churn until the ice cream has set.
  4. Once set, transfer the ice cream into a sealable container, place in the freezer and store until needed.

Variation

  • To make the almond ice cream, reduce the quantity of caster sugar to 150g and add 75–100ml amaretto and 50g toasted flaked almonds.
