White chocolate ice cream

This has to be one of my favourite ice creams. It’s smooth and tastes so good either on its own, with fruit or served simply with chocolate sauce. Make sure you use good-quality white chocolate and not standard sweet bars of white chocolate as these are full of other ingredients which will cause the mixture to go grainy in texture when churned.

Ingredients

Quantity Ingredient
12 egg yolks
200g caster sugar
600ml milk
250g white chocolate, chopped
600ml double cream

Method

  1. Whisk the egg yolks and caster sugar together in a bowl until pale and fluffy.
  2. Bring the milk up to the boil in a pan.
  3. Place the chocolate into a large bowl and leave to one side.
  4. Pour the hot milk onto the egg yolks and whisk together. Return to the pan and heat, stirring all the time until the mixture thickens.
  5. Pass the hot mixture through a sieve onto the chocolate and allow to cool.
  6. Mix in the cream and place in an ice-cream machine and churn until set. Transfer to a sealable container, place in the freezer and store until needed.
