Seared tuna with coconut chilli chutney & cabbage salad

The idea for this came from a dish I had on holiday in the Maldives. The fish was amazing and the dressing was so simple. It was so good that I had it every day for lunch. I sneaked into the kitchen before I left to grab the recipe, so here it is, and I hope you enjoy it too. You can use desiccated coconut, but fresh is best.

Ingredients

Quantity Ingredient
4 x 150g tuna steaks
1 tablespoon vegetable oil
sea salt
freshly ground black pepper

For the coconut chilli chutney

Quantity Ingredient
1 tomato
2 fresh red chillies
1/2 fresh coconut
2 garlic cloves
1/2 lime, juiced

For the salad

Quantity Ingredient
1/2 white cabbage
1 red onion
3 tablespoons fresh coriander leaves
3 tablespoons fresh mint leaves
1 tablespoon fish sauce
1 tablespoon white wine vinegar
1 tablespoon palm sugar
2 tablespoons coconut milk
2 limes, juiced

Method

  1. Make the coconut chilli chutney. Roughly chop the tomato and chillies. Grate the coconut, if using. Pound the garlic, red chillies, tomato, coconut and lime juice in a pestle and mortar to make a paste, or process in a food processor. Set aside.
  2. For the salad, finely shred the white cabbage and red onion using a food processor or mandolin. Mix them together in a medium glass bowl. Roughly chop the coriander and mint.
  3. Heat a griddle pan until hot. Rub the tuna with a little oil, then season with salt and pepper. Sear the tuna for 2–3 minutes on each side. Remove from the pan and set aside to rest.
  4. Meanwhile, mix together the fish sauce, white wine vinegar, palm sugar, coconut milk and lime juice and pour over the cabbage and onion. Stir well, then add the herbs and mix until well combined.
  5. To serve, slice the tuna and arrange it on a board or long plate, and pile some cabbage salad on top of it along the centre of the slices. Spoon the coconut chilli chutney on top.
