Steak with peppercorn sauce

When I was a kid, my folks used to take us out to the Berni Inn and Steakhouse for steak, jacket potato and peas. The steak always came with a peppercorn sauce, which I loved then and still love now. Like most of these dishes, once you realize how easy it is to make, I hope you’ll try doing it at home.

Ingredients

Quantity Ingredient
vegetable oil, for deep-frying
400g oven chips
4 x 200g sirloin steaks
50g butter
400g peas
sea salt
freshly ground black pepper

For the sauce

Quantity Ingredient
1 garlic clove
2 fresh thyme sprigs
1 tablespoon crushed black peppercorns
50ml brandy
200ml beef stock
200ml double cream

Method

  1. Heat the oil in a deep-fryer to 180°C. Fry the oven chips for 2–3 minutes until crisp and golden, then remove and drain on kitchen paper. Sprinkle with sea salt. Set aside and keep warm.
  2. Heat a large frying pan until hot, season the steaks with salt and pepper and fry for 2–3 minutes on each side. Add the butter for the last minute of cooking. Transfer to a warmed plate to rest.
  3. To make the sauce, crush the garlic. In the same pan that the steaks were cooked in, fry the garlic for 30 seconds, then add the thyme, peppercorns and brandy. Standing well back, and keeping the lid handy, tip the pan to ignite the brandy. Alternatively, just let it bubble for 1–2 minutes to burn off the alcohol. Finish by adding the stock and cream.
  4. Bring a pan of salted water to the boil, add the peas and cook for 1–2 minutes, then drain.
  5. Place a steak on each place with the sauce poured over, and the chips and peas on the side.
