People are starting to come around to eating veal again, thank goodness. In my opinion, British veal shouldn’t be tarnished with the same brush as imported veal. Veal is a by-product from the milking process: we often have too many male calves, which are just disposed of. That seems crazy to me, especially as a farmer’s son. Give it a try and I’m sure you’ll love it.

Ingredients

300g chantenay or other baby carrots, (optional)
150g butter
25g caster sugar
4 x 200g veal steaks
50g plain flour
2 eggs, lightly beaten
100g panko breadcrumbs
400g baby spinach
sea salt
freshly ground black pepper

For the gremolata

Quantity Ingredient
1 garlic clove
2 lemons
2 tablespoons fresh flat-leaf parsley leaves

Method

  1. Halve the carrots lengthways, if using. Place the carrots, 50g butter, the sugar and 200ml water in a pan. Bring to the boil, reduce the heat and simmer until they are tender and all the liquid has evaporated – about 10–12 minutes.
  2. While the carrots are cooking, flatten the veal into 5mm thick steaks. Season each one with salt and pepper, then coat in flour, egg and breadcrumbs.
  3. Melt 50g butter in a frying pan, add the veal and fry over a medium-low heat for 2–3 minutes on each side, until golden brown. Remove and set aside to keep warm.
  4. Meanwhile, make the gremolata. Grate the garlic and lemon zest, finely chop the parsley and mix them together. Cut the lemons in half.
  5. Melt the remaining butter in a large saucepan, add the spinach and cook for 1–2 minutes, until wilted. Season with salt and pepper.
  6. To serve, place a piece of veal on each plate with some of the juices, add a spoonful of spinach and carrots, if using, and sprinkle with the gremolata. Serve with the lemon halves.
