Apple & marzipan tart

Using ready-made marzipan and good puff pastry means this can be made in no time. Once you’ve added the apples you can freeze the tart, as they won’t go brown. If you do, just make sure the oven is very hot so that the base cooks through.

Ingredients

Quantity Ingredient
3 dessert apples
75g butter, plus extra for greasing
flour, for dusting
230g ready-made puff pastry
1 tablespoon icing sugar
100g white marzipan
75g caster sugar
100ml double cream
vanilla ice cream, to serve

Method

  1. Core and thinly slice the apples. Preheat the oven to 200°C. Lightly grease a baking sheet.
  2. Lightly flour the work surface and roll out the puff pastry to make a large rectangle. Place the pastry on the baking sheet and prick it all over with a fork. Dust it with icing sugar.
  3. Slice the marzipan thinly and spread it over the pastry base. Cover it with the apple slices and bake in the oven for 10–12 minutes, until golden brown and crisp around the edges.
  4. Meanwhile, make the sauce. In a pan, melt the caster sugar, cream and butter together and simmer for 2–3 minutes, until golden.
  5. Serve the tart with the sauce and vanilla ice cream.
